Healthy Choc Oat Pancakes

these delicious pancakes are filling and totally feel as though your eating dessert for breakfast! My kids love these and unlike regular sugary pancakes where they ask for more and more. They are full after 2 or 3 mini Pikelets  sized ones!

what you will need:

Foodprocessor , 2 bowls, frying pan

I blend my own oats – but you could buy quick oats. This is why I used the foodprocessor. It makes the oats more floury, really fine. Where as quick oast from a packet are course and not so fine.

Ingredients:

3eggs

1 1/2 cup milk

1 1/2 cup oats (blended in foodprocessor)

4 tablespoons cacao

Small amount of Butter for frying pan

Method:

In a separate bowl place your egg whites and in the opposite add your yolks. In your bowl of yolks add the oats, milk, and cacao. Mix well!

Whisk your egg whites in the other bowl until stiff.

Slowly fold your egg whites into the bowl of oat batter.

Heat your frying pan, and grease your pan with a nob of butter.

Place a small amount into frying pan. Waiting for little bubbles to appear on the surface. When you have roughly a dozen bubbles on the surface, flip your pancake. Cook the other side for approx 1min .

Now you should have a pancake stack

You can top these with what ever you like.

But above I have topped mine with whipped cream, chopped fresh strawberries, dark chocolate drops, toasted hazel nuts and some maple syrup.

Bon appetit

The Brighton Espy – Hot or Not??

Seriously this place used to be “the hang out” about 10years ago when it had been newly refurbished and all done up with a fancy cafe and great new pub atmosphere. The bistro area was absolutely awesome complete with built in playground for the littlies as well. Sooooooooooooooo did it hold up to the expectation of 10 years ago??

The food was pretty awesome in the cafe area, but with so much on the same street offering amazing food also – i think it made the good ol’ trusty Espy a few notches below what it used to be.

This Pie with smashed peas and buttery garlic potatoes was super tasty – and such a huge serve, it was so unfortunate i couldn’t eat it all!!

the potato was probably a little bit grainy, and not silky smooth. the meat in the pie was divine, but the pastry was soggy on the bottom. Mushy peas! whats not to love… only there was sooooo much on the plate, it probably could have been a smaller serve.

Vegetarian burger
a burger that was just lacking that LOVE that everyone expects to see on the plate made for a 5/10.
The burger patty was pretty tasteless, the beetroot on the burger gave it a nice flavour, but otherwise it was just a carb over load of miss matching, not well seasoned burger. And it’s about time you guys got your selves a few new plates! The plate was marked all over from cuts into the plates and they had dark grey line work from cuts over time. Looked like 1000 meals had been eaten off that plate. chips, were crunchy and good.

IMG_3272[1]

a Kids MEAL!! i’m so serious when i say kids meal! this was a huge serve for a kids meal pizza. and it came with chips on top! it would have been great if this was the size kids meal for my 9 year old, but not for my 5 year old. she only ate one slice of pizza and about 4 chips, the flavour was pretty basic – i suppose thats what most kids want, but in this case it didnt really hit the spot for miss 5.

All in all, i probably wouldnt rush to go back here any time soon. it is lacking a lot of attention to detail, and the staff need a good turn around to make this place as fun and inviting as it used to be. with it now surrounded by amazing cafe’s it would be hard work to keep this place enticing, but it would be such a shame to see this place go further down hill.

Our empty plates sat on our table for over an hour while we sat and chatted after we had finished. not one staff member came to offer us any more drinks, nor did they come past and take away our dirty dishes. the staff were certainly not the typical “great waiting staff” that you would usually expect in a cafe environment.

Eire Cafe – Our team is divided! YOU BE THE JUDGE

There has been so much talk about, whats HOT and whats NOT in Adelaide – that there is always a new find just around the corner. so … Introducing:

Eire Cafe – Springbank road, Clapham, Sa

Upon going to this cafe, the team at Eire had known we (Dan & Leia) were coming in on a particular day for breakfast. we had the kids with us also, so it seemed like we almost filled the cafe with 5 people! As soon as we sat down, we decided we needed coffee ASAP! so ordered and it literally appeared before our very eyes. It was outstanding in flavour and honestly so good I stood up and asked what beans they used because it was delicious and made well.

Our breakfast was ordered, and we were excited!

http://instagram.com/p/twoy0MqG5R/?modal=true

http://instagram.com/p/twqcmIqG6y/?modal=true

now the reason behind our team being divided…

The experience Dan & Leia had was mind blowing with flavour & textures. however remembering the cafe staff were expecting and knew we were going in on a certain day, as it was discussed a few days prior via instagram.

Celeste & Matt couldnt make this breakfast and went on a separate weekend – 2 weeks later. It was so bad, that they had to send back two meals and them be remade. the reasons why, the bacon was dripping in oil and it was so bad that it was dripping onto the plate. the coffee milk was burnt, and over cooked so tasted horrid. they offered no pressed juice or milkshakes, therefore Matt had nothing to drink because he does not drink hot drinks. the eggs were undercooked, there was a mound of avocado almost 2 times the size of the one featured above in the photo of Leia’s. there was certainly no consistency with the chili hint in the avocado or even well seasoned with Celeste’s experience.

NOW you be the JUDGE…
was Eire Cafe really good? or did they know to be outstanding on the occasion they were expecting Dan & Leia?

Jack Rubys – Adelaide City

awesome place to visit, if your in the city. if your a traveler or have friends and family coming from overseas and they want to try some Aussie crocodile – this is the place to do it in little ol’ Adelaide. essentially it really looks like “just another burger place” and although it is a burger kingdom, they do them well and execute them well. the atmosphere or ambiance of Jack Rubys is certainly up there with the best places to eat and visit in SA.

here we have Pop Corn Croc Bites –

jackruby1

Some people might say – oh my gawd, you’ve ruined some good croc meat. but i say well done chef for giving Adelaide something more than just a plain old boring crocodile piece of meat on a plate! these were so delicious, i could go back again and again just for them.

this was just entree – of course! here is the main

Soft shell crab soft taco and on the right is a 5 spice duck soft taco

jackruby2

So delicious, of course we had to follow through and have dessert!!

red velvet waffle with chantilly cream and fresh berries

jackruby3

You certainly wont be dissapointed here guys! there is something for every one. try the burgers (although not pictured in this post) they are awesome, and we have been back many times just for a burger. It truly has a great atmosphere and any one could enjoy their night here.

Taste of the Himalayas – Brighton

Not every one would know this place is here, it would probably go un-noticed being a small place on a busy street. Unless you lived in the area, or were passing here frequently. It certainly shouldnt go un-noticed considering the food is great, and the value even better.

Here are a few dishes from our last visit:

Who knew a Winter Soup could be such a winner?

Ok, so i know winter is over now, but if any one can offer a wholesome winter food for lunch. Light meal, but still filling? Where, NEVER? i hear you say… Well yep! we know where. Devour Patisserie, thats where!

here we have – Ham hock, lentils and root vegetable soup with toasted ciabatta

dev2

superb flavour, with wholesome vegetables. a real hearty flavorsome soup that was not lacking any HAM! seriously, i could easily complain about soup from many, many cafe’s/restaurants from just being a boring ol’ soup with not enough flavour or texture – you know the ones that you have to add lots of salt and pepper to? well not this one! this was delicious.

this was accompanied by a honeycomb milkshake

dev3

and then dessert:

To finish, an apple, almond & milk chocolate stack…..oh and a snickers flavored macaron

Chia Puddings – Are EASY PEASY

Seriously! I mean — SERIOUSLY!!!
How have I not discovered these earlier?

If your on a health kick like me, you need to jump on the ban wagon and try making a chia pudding.
So what is it you say?
did you know that chia seeds can grow to 10 times their size when absorbing liquid?
Well now you do!
It’s chia seeds in milk. Not just plain cows milk, ANY milk you want to use. I like using almond milk, but I’ve been known to use rice milk and coconut milk for these chia puddings.
The texture is a little bit like rice cream. Remember the old school rice cream in a can? It’s texture is very similar. So texturally if you didn’t like the rice puddings, you probably won’t like these puddings.

Flavour combos
chocolate milk, milo, strawberry milk, vanilla milk, eggnog, banana milk. You could do any of these with toppings (if wanted) I haven’t done mine like this because I don’t like added sugars and artificial flavourings.
But you could use cacao powder, cinnamon, mango, peach, kiwi fruit, cherry, blueberry, banana, apricot, honey, coffee & any other fruits you like! Simply purée them up & add milk of your choice.

Roughly it’s 1 cup of milk or liquid to 1/8 cup chia seeds to make a pudding.

your liquid may be a combination of puréed fruit and milk

The BEST recipe so far that is hands down, my FAVOURITE is – Mango, Banana, Cinnamon & Coconut Milk.

IMG_0982.JPG

1 banana
1 mango (or equivalent in frozen pieces)
1 teaspoon cinnamon
1 can of coconut milk

Makes 3 puddings a bit larger than a cup each.
Prepare 3 jars with 1/8 cup of chia seeds and poor your liquid in. Give it a stir or if the jar has a lid, shake it up.

These make great snacks, desserts or even breakfast. Very filling and can be super tasty depending on what you like and what you want to use.

Here is a coffee one I made over the weekend

Sit Lo – Bank Street Adelaide

Sometimes its not what’s on the plate that counts…

this cute little cafe is tucked away off of one of adelaide’s busiest streets. Serving top quality asian food with fresh ingredients and amazing flavours. It certainly is an experience when walking through the door at lunch time to be greeted with a smile.

Not only does the place have that up-cycle vibe that i love, it also has that modern feel too. so it really did make me feel at home. the long table through the centre was hands down one of the best features to this little joint, because its all about making people unite and come together – even when you dont know people, you can still sit together or next to each other.

IMG_9255

Those Lotus Chips were sen-fricken-sational! so crispy, not like anything i had ever eaten before – and at a side serve of just $4.50 it certainly is not going to break the budget. a Delicious beef Pho was fresh and fragrant and thoroughly enjoyed.

IMG_9258

Then there was the take away delicious crispy pork noodle bowl at just $10.50. it was another great combination of flavours that worked so well together texturally and packed full of the drool factor.

I’m positive you wont be dissapointed with what Sit Lo has to offer, and you will go back again and again to try more of the menu like we have.

Bon Appetite

The perfect snack

IMG_0064

Seriously a simple snack idea just in time for the school holidays!
How easy is this?

it has all the elements to make a perfect treat for kids and for us adults too.

Spread as best you can peanut butter all over your banana. you might also like to use Nutella. Roll your banana log in a plate full of rice bubbles. slice on a board and ENJOY
