Healthy Choc Oat Pancakes

these delicious pancakes are filling and totally feel as though your eating dessert for breakfast! My kids love these and unlike regular sugary pancakes where they ask for more and more. They are full after 2 or 3 mini Pikelets  sized ones!



what you will need:

Foodprocessor , 2 bowls, frying pan

I blend my own oats – but you could buy quick oats. This is why I used the foodprocessor. It makes the oats more floury, really fine. Where as quick oast from a packet are course and not so fine.

Ingredients:

3eggs

1 1/2 cup milk

1 1/2 cup oats (blended in foodprocessor)

4 tablespoons cacao

Small amount of Butter for frying pan



Method:

In a separate bowl place your egg whites and in the opposite add your yolks. In your bowl of yolks add the oats,milk,and cacao. Mix well!

Whisk your egg whites in the other bowl until stiff.

Slowly fold your egg whites into the bowl of oat batter.

Heat your frying pan, and grease your pan with a nob of butter. 



Place a small amount into frying pan. Waiting for little bubbles to appear on the surface. When you have roughly a dozen bubbles on the surface, flip your pancake. Cook the other side for approx 1min .

Now you should have a pancake stack





You can top these with what ever you like.

But above I have topped mine with whipped cream, chopped fresh strawberries, dark chocolate drops, toasted hazel nuts and some maple syrup.

Asian chicken salad with crispy dried shallots



This was one of the salads we were making and selling, that I had for lunch today in writers week at the adelaide fringe festival. It was the BOMB! Delicious fresh flavours, that had great texture throughout. Delicate soft rice noodles with gingery poached chicken, thinly crisp slaw topped with crunchy fried shallots.

This is a recipe where you make as much or as little as you need, so I have put the ingredients below but you add more of the flavours that you like the most.

Recipe:

Cooked rice noodles

Poached chicken

Thinly sliced cucumber (minus the seeds)

Thinly cut carrot

Shredded cabbage

Mint leaves

All tossed together

Dressing:

1/2 cup Lemon juice

1/2 cup fish sauce

1 tsp sugar

A few coriander leaves chopped

1 hot chili

1 crushed/diced garlic

A pinch of ginger 

Lime crisp cookies

Combine that with Lime, and you have a “WOWZER” of a combination

There is something about limes and coconut in our house – the kids love it, and mum and dad love it! Seriously can’t get enough. Now I’m kicking my self, knowing I should have made them coconut and lime. Oh well, next time!!!



Now this batch/recipe will make LOTS! Depending on stage size your after. So you may want to halve it and try them first and see if you love them as much as we do. But seriously, you know you will love ’em so just make the whole lot hahaha…

Recipe

1 1/2 lime zest

1 1/2 lime juice

250g butter

1 3/4 cup caster sugar

1 tspn vanilla

1 egg

(Mix the above ingredients well)

2  3/4 cups SR. Flour

METHOD:

Roll into small balls and press onto a tray. These are a very buttery crisp cookie, so will spread far on your tray. Give them space between each other. Bake in a fan forced 180 degree oven for 15 minutes. they will look soft when they come out, but will harden and go crunchy after cooled. Totally the type of cookie you are going to want to dunk in your cuppa!!! Or to accompany your green tea 👌

Vanilla milkshake protein balls

These babies have been a favourite in our house this past week! Even the kids have wanted them for lunchbox treats.
Recipe: (equal amounts of dry ingredients*nuts*grains – dried fruit/liquid)
Using a food processor or thermomix
Grind your cashews and peppitas and place in a bowl to the side.
Place medjoole dates in the food processor and approx 1 tsp of honey. Until all blended well and smooth.
Add 3/4 of your cashew and peppita mix back to the blender, along with a sprinkle of desicated coconut and chia seeds. Mix well.
Add vanilla bean seeds. Mix well.
Add the rest of your cashew and peppita mix and mix well.

In a bowl have some sesame seeds, scoop small balls out of the blender and roll in the palm of your hands then roll in the sesame seeds.

Seriously if you can get these to last more than a week – HALF YOUR LUCK!
I made a large batch and they all went like hot cakes in a few days

Meat FREE Monday’s – ANY ONE?

does any one else enjoy Meat FREE MONDAYS as much as we do?

it is seriously a family tradition in our house now. We don’t eat any where near as much meat as we used to, and have easily been able to incorporate plenty of vegan and vegetarian dishes into the rest of our week.

these little babies were super easy to make and so awesome for the summer weather.
If your anything like me, the last thing you want to do is turn on the oven in the heat – and heat the house up even more.
So when you see a window of cooler weather, switch on that oven and get creative.

Frittatas are awesome and can include any thing! they are all about the eggs, and the veggies are what ever is left over in the fridge or in some cases – whats on special or in season at the market!

in the picture above i’ve made zucchini and corn, but remember the eggs are the star of the dish!
ingredients – method :
2 small zucchini’s grated
1 can of corn kernals drained
1/2 a large onion diced
10 eggs
3/4 cup of grated cheese
pinch of salt and pepper
2 tsp curry powder
mix all ingredients together well (if you have any herbs add them!

I love using my pyrex dishes, and in this instance i used a square one.
baked in the oven on 180 degrees fan forced for 40minutes
Once cooled i cut it into large slices and placed in a container in the fridge.
I sliced them into bite size pieces because they were appealing for the kids. But you could do this for a dinner party dish! top it with a half cherry tomato. you could also place a piece of smoked salmon, capers and dill on top. everything works with a frittata!

There is this little place in town… that sell’s Amazing burgers – you simply must go!

when you find a cozy spot in the city that sells a pretty awesome burger, why do you need to go any where else??

honestly guys, i have now been a couple of times and the stuff here seems pretty amazeballs. the atmosphere plays a big part, but even more so now that we are into the summer months! This neat little bar is set on victoria square and i bet you didnt even know it was there?! it has a large out door seating area right out the front so you can over look the whole of victoria square. But there is also inside dining for those who want to be in that real bar like environment, and order drinks as you please.

The service here is second to none! Really top quality, especially when it comes to topping up your drinks and friendly conversation. The staff are pretty awesome at representing a neat little cafe/restaurant/pub that you are going to want to visit again and again.

This was the Al’ Capone burger with beef patty, smoked mozzarella, pancetta, balsamic Caramalised onions, semi sundried tomatoes with pickled chili

Brie balls with chili jam! ohhhhh WOW! your gonna love these, just on their own.

If you have the chance to visit here – i highly recommend it. it is certainly one of the top spots in adelaide to visit for a burger bar experience.

Fruit Water CRAZY!

Doesn’t every one love a thirst quencher??

OH MY GAWD, if you love fruit and love being healthy then this is definitely one for you! and its sooooooooooooo simple. All you need is an empty bottle and some chopped up fruit. i love buying what ever fruit is in season, especially when its local and fresh produce – you can really taste the LOVE of home grown fruits.

So here are some of the most recent fruit combinations i have made:

these combos could be anything you choose, or anything you have on hand! its an easy way to flavour your water with out cordials or artificial flavourings.

you can fill them up a few times through out the day and they will continue to infuse the water. probably not as flavoursome as the first time you fill it up, but its certainly a kick of flavour you didnt have with just plain water.

The Brighton Espy – Hot or Not??

Seriously this place used to be “the hang out” about 10years ago when it had been newly refurbished and all done up with a fancy cafe and great new pub atmosphere. The bistro area was absolutely awesome complete with built in playground for the littlies as well. Sooooooooooooooo did it hold up to the expectation of 10 years ago??

The food was pretty awesome in the cafe area, but with so much on the same street offering amazing food also – i think it made the good ol’ trusty Espy a few notches below what it used to be.

This Pie with smashed peas and buttery garlic potatoes was super tasty – and such a huge serve, it was so unfortunate i couldn’t eat it all!!

the potato was probably a little bit grainy, and not silky smooth. the meat in the pie was divine, but the pastry was soggy on the bottom. Mushy peas! whats not to love… only there was sooooo much on the plate, it probably could have been a smaller serve.

Vegetarian burger
a burger that was just lacking that LOVE that everyone expects to see on the plate made for a 5/10.
The burger patty was pretty tasteless, the beetroot on the burger gave it a nice flavour, but otherwise it was just a carb over load of miss matching, not well seasoned burger. And it’s about time you guys got your selves a few new plates! The plate was marked all over from cuts into the plates and they had dark grey line work from cuts over time. Looked like 1000 meals had been eaten off that plate. chips, were crunchy and good.

a Kids MEAL!! i’m so serious when i say kids meal! this was a huge serve for a kids meal pizza. and it came with chips on top! it would have been great if this was the size kids meal for my 9 year old, but not for my 5 year old. she only ate one slice of pizza and about 4 chips, the flavour was pretty basic – i suppose thats what most kids want, but in this case it didnt really hit the spot for miss 5.

All in all, i probably wouldnt rush to go back here any time soon. it is lacking a lot of attention to detail, and the staff need a good turn around to make this place as fun and inviting as it used to be. with it now surrounded by amazing cafe’s it would be hard work to keep this place enticing, but it would be such a shame to see this place go further down hill.

Our empty plates sat on our table for over an hour while we sat and chatted after we had finished. not one staff member came to offer us any more drinks, nor did they come past and take away our dirty dishes. the staff were certainly not the typical “great waiting staff” that you would usually expect in a cafe environment.

Mango + Toppings = OH MY GAWD

Lets start topping our Mango’s to make a delish healthy snack! its super easy, and you can use anything you really love, or what ever you have in your pantry. the list is endless! when i say anything i really mean anything. You can use, nuts, seeds, grains, yoghurts, sauces as in chocolate, caramel, even passionfruit pulp!

on this occasion i have used:

1 Mango

2 teaspoons of greek yoghurt

2 teaspoons of coconut flakes

1 teaspoon of freeze dried pomegranate seeds

and a sprinkling of cinnamon

How do you eat it? i hear you ask! ~ the answer is simple… with a spoon

Such a delicious snack, no longer do you need to eat a plain ol’ mango! why not add your favourite toppings.

Paddy’s Lantern – WOW what a statement!

Paddy’s Lantern – Gilbert street Adelaide.

This little tucked away on a busy street cafe, is starting to become a fashion statement in adelaide. It’s fancy tiled bench with quirky interior design, with lots of seating inside and out has already got a strong regular following.

the food regularly changes to suit whats in season, and they use fresh accessible produce from around adelaide. The staff… WOW the staff are absolutely mind blowingly beautiful. Honest, down to earth, clearly HAPPY to be at work & obviously well looked after. I think i enjoyed the staff’s company more than my own, and wanted to go work behind the counter with them. they are here to make a statement, and that they did!

The picture above is their own take on a waffle. it was not waffle texture, but it was flavoursome. it was almost like a slice of french toast. my daughter absolutely loved it. i’m not sure it would win any awards for being visually “pretty” but it was so delicious, who cares!

Talk about perfect coffee porn photo right here!! it was beautiful, and made well. I would definitely go back for a good quality coffee.

then there was this… Although on first impressions of this dish coming out weren’t as great as first thought, it certainly tasted delicious. That potato patty was soooo yum! I think I could have eaten a whole stack of them 😊 Spinach cooked al’dente topped with a fried egg all sitting on a bed of red pepper purée. again not the prettiest of food porn that we have posted. but definitely up there with the best cafe’s in adelaide.
